Spicy Vegetarian Chili- So Yummy

I found several recipes for Vegetarian Chili. I had to make some alternations to the recipes I found. It turned out great! Here is what I used:
1 tablespoon olive oil
1/2 medium onion, chopped
2 bay leaves
1 teaspoon ground cumin
2 tablespoons dried oregano
1 tablespoon salt
2 scotch bonnet peppers, chopped
1 green bell pepper, chopped
1 yellow bell pepper, chopped
2 jalapeno peppers, chopped
3 cloves garlic, chopped
2 (4 ounce) cans chopped green chile peppers, drained
1 (12 ounce) packages vegetarian burger crumbles
1 (12 ounce) package vegetarian sausage crumbles
2 (28 ounce) cans whole peeled tomatoes, crushed
4 tablespoons of chili powder
1 tablespoon ground black pepper
1 (15 ounce) can kidney beans, drained
1 (15 ounce ) can black beans, drained
1 (15 ounce) can of whatever beans you prefer, ( I chose navy beans) drained
1 (15 ounce) can black beans
1 (4.5 ounce) can of sliced mushrooms
1 dash of pepper sauce
***Serves 1 large pot
Heat the olive oil in a large pot over medium heat. Stir in the onion, and season with bay leaves, cumin, oregano, and salt. Cook and stir until onion is tender, then mix in the green bell peppers, jalapeno peppers, garlic, and scotch bonnet peppers. When vegetables are heated through, mix in the vegetarian burger crumbles and veggie sausage. Reduce heat to low, cover pot, and simmer 5 minutes. Mix the tomatoes into the pot. Season chili with chili powder and pepper. Stir in the beans. Bring to a boil, reduce heat to low, and simmer 45 minutes. Stir in the mushrooms, and continue cooking 5 minutes before serving.

i'm a newbie at being a veggie and i've been struggling finding GOOD recipes
do you have any cookbook or website recommendations?

Yep, this sounds and looks good. I wish I had it last year when I was looking for recipes for me and my family's No-Meat Mondays resolution. Needless to say I ran out of recipes and we haven't done a no-meat Monday dinner in forever.

I will set this recipe aside though so we can use it for the '09 no-meat Monday resolution :o)

Shea- There are a ton of veggie resources. Go to a bookstore and park yourself there until you find a book you like. Start from there.

Also online, there are so many sites and blogs like Meikmeika, she is a vegan blogger who has Sisterlocks. She posts both food and recipes always.

Also, in ATL there are veggie restaurants and meet-ups. There is also a Black Vegetarian Society. Check the major city closest to you for these groups.

Laquita- this was such an easy recipe, it's amazing. To cut the time in half you could by cut peppers/onions, and garlic.
